On our recent trip to the farm, the kids were in awe over the ginormous radishes for a $1 each.

So much in awe that we came home with eight!

There was/is no way we’d eat all of these in a salad. Thanks to @usura on Twitter, I experimented and found that we are all huge fans of {cooked} radishes!

Option 1::

After washing, thinly slice the radishes and sauté in olive oil. Yep. That’s it.
We let them sauté quite a while – the crispier, the sweeter they will be. Trust me.

Option 2 ::

Wash the radishes well, cut off the ends, and then cut the radishes in quarters.
I placed them in a baking dish, topped each piece with a tad of butter (olive oil) and sprinkled all with Kosher salt and pepper. Friends of ours serve these at swim meets. I’m thinking it would be great camping meal as well.

Clean-up = easy-peasy.

Mazoodles

1 box gf noodles - (we use Ancient Harvest elbow)
2lb ground beef
2C mozzarella cheese, shredded
16oz tomato and basil pasta sauce
taco seasoning to taste

Brown ground beef, adding taco seasoning and drain. Add cherry to the top.

Enjoy!

Cheesey-brussel-sprouts

Brussel sprouts have always been one of Nicholas’ fave. Can you believe it?? Too bad I have to entice Maggie-Peyton with the bacon! ;)

If you are a brussel lover or not, this is a yummy recipe. Not only it is a good meal, but it brings lots of good memories. For the longest, this was THE Monday dinner we shared with Dewey and Stacy (aka Tess). No question about it. Stacy and I would take turns making the beans, and the other would bring the rice, and fixins across the hedge (we lived next door to one another). This is the easiest meal (and prob. one of the cheapest), so enjoy!

Note: We used to cook an already-seasoned pre-packaged red bean mix. Not these days. I am so paranoid of cross-contamination, so I assemble my own. :)

2 bags of red beans (no, I did not pre-soak them)
chopped celery
1 can of black beans
1 can of garbanzo beans (just for giggles)
1 chopped green bell pepper (I would have used a red too, if I had one)
1 or 2 (depending on preference) smoked sausage or kielbasa
2 chopped onion
Jane's Crazy
Creole seasoning
Prepared white rice
Shredded cheese & chopped onions (for toppings)

Rinse the beans and pour in Crock Pot. Fill almost to top with water. Cook on low for 2 hours. Add the remaining ingredients (minus the rice and toppings) Cook on Low for an additional 5-6 hours. (Watch water level - you may need to add more after a few hours)

Serve over prepared rice. Add your toppings. And expect to cook this again next week. She lived (lives) only 6 houses down from where I grew up. Nan is famous (in Bryan's world) for her pot roast. Although my attempts will never be just like hers, he likes it. So, it's worth posting. :)

In all my efforts today, I didn't take a fancy picture of my ingredients. So, just follow me...

1 - pot roast (Nan rubs hers with flour, but that's not allowed in our GF world)
Jane's Krazy
Use all or what you have on hand.....carrots, green bell peppers, red bell peppers, celery, potatoes (quartered), onions

Lay the roast (seasoned with Jane's) in the crock pot and layer the cut veggies.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://1.bp.blogspot.com/_YHfd3C4RMMs/SoC-KLGyw0I/AAAAAAAADYw/LoiuM6kcx4g/s320/DSC03619.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5368499837814883138" />
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://1.bp.blogspot.com/_YHfd3C4RMMs/SoC-J7lXYNI/AAAAAAAADYo/2GzODZe0PF4/s320/DSC03621.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5368499833648144594" />
I cooked on LOW for 8 hours. Nope. NO THANK YOU! In the spirit of the upcoming HOLIDAY, I knew for sure B would appreciate them. I am so green when it comes to cooking red-meat-stuff! So green, that I gave the man at WalMart meat department a good chuckle this morning. I thought there was paper on the bottom of these ribs. (ya' know - like when you buy a roast and you have to peel the paper off the back before you put it in the baking pan) ?? Stay with me here.....I was on the phone with Daddy this morning as I was assembling this, TRYING to pull the paper off. It came off easily of some pieces, but not others, and still others didn't seem to have any at ALL!! I asked Daddy if he thought there would be paper on the back of ribs. His answer *I don't know, Ju. I'm not looking at them! Go soak them in water and see if it will come off then* So, I did. No change.
Got off the phone, called Nicholas in there and asked him if he thought it was paper. He just shrugged. THESE PEOPLE WERE NO HELP TO ME!!! So, what's a girl to do?? I called Walmart Meat Department!! I told the man I had never before cooked these things, much less touched them (RAW) and I wanted to know if there was paper on the back. Or what was I peeling off?? His answer....*I don't know, ma'am. I'm not looking at them* (Well, duh!!) I asked him if he knew how they were typically packaged - that would help with my conclusion. And sure enough....NO PAPER!! So, what I was struggling to remove was part of the rib!!! YOU HAVE GOT TO BE KIDDING ME!!! (Again, I don't eat these things!!) So, he got a good laugh and hung up. I went back to cooking my man's dinner. Which he said was AWESOME!! Oh, what I do for that man of mine!!

And here is what I did....
Seasoned the steaks with garlic pepper and place in LG Crock Pot.
Splashed (1/3 C, maybe??) worcestershire sauce and appled juice over steaks
*Prepared the potatoes and corn and wrapped individually in foil.
Layer potatoes then corn on top of steaks.

<img style="cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://2.bp.blogspot.com/_YHfd3C4RMMs/Sj8DZnf-5iI/AAAAAAAACcU/cuIx0J-bIek/s320/DSC02005.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5349998620974179874" />

Cooked on LOW for 7.5 hours. Seriously, my kids assembled this meal this morning in the crock pot. (all except the chicken - I have issues with raw meat and little hands!) ;)

Again - this is how I made it. Adjust accordingly for your family.

3 frozen chicken breasts (Mag and I always split one piece - and, yes, Nicholas will eat an entire lg. piece himself! He is a growing boy!)
2 cups of applesauce
2 sm yellow onions, diced (you might want to use just one - we like onions)
1 T apple cider vinegar
1/2 tsp cinnamon
1/2 tsp black pepper
2 garlic cloves, minced
1/2 tsp red pepper flakes

<img style="cursor:pointer; cursor:hand;width: 214px; height: 320px;" src="http://1.bp.blogspot.com/_YHfd3C4RMMs/SikU-osvNdI/AAAAAAAACLI/4OAOjvs9-kM/s320/DSC01331.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5343825499161310674" />

I used our smaller crock pot for this. (4 qt, maybe?) I placed the chicken in the bottom. The kids mixed all other ingredients in a bowl and poured it over the chicken. I also added a splash of water (1/2c-ish) in the bottom. My recipe didn't call for it, but it just made me feel better.

Ready to be cooked....

<img style="cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://4.bp.blogspot.com/_YHfd3C4RMMs/SikU-845BBI/AAAAAAAACLQ/WAxMBrQlQkg/s320/DSC01332.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5343825504580994066" />

Covered and cooked on low for about 7 hours.

I served with broccoli.

<img style="cursor:pointer; cursor:hand;width: 320px; height: 214px;" src="http://2.bp.blogspot.com/_YHfd3C4RMMs/SikU_EZCabI/AAAAAAAACLY/NMqWnZDlvpM/s320/DSC01338.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5343825506594875826" />

(preferred asparagus, but we <del>devoured</del> enjoyed it earlier this week!)
This will probably been made again sooner than later!

Late Momma's Breakfast

Did you know you can cook an egg in the microwave?? I found this recipe last year and haven't made these in a while, and I'm not quite sure why. They are one of the easiest WF/GF breads to make, IMO. I always hate having to take out 23 different types of flours (white rice flour, tapioca flour, potato flour, brown rice flour, sorghum flour, millet flour, etc) just to make a loaf of bread! I know - LAZY! Not really, I just wish I could find a better system or routine for making our breads. (And not the $5 a loaf system!) Any suggestions??

So, without having to drag everything off the baking shelf, I made 2 batches of PUMPKIN-CORN MUFFINS. I got this one from Gluten Free Mommy. (Don't you just love her??) It called for Penne Noodles. But the only noodles I had on hand were Rice Spaghetti and Mrs. Leeper's Pasta for Kids. I opted for the latter. This was a big hit with everyone last night, so it's definitely going on the menu rotation! I served it with corn (not following the rotation diet, I know) and Bryan said next time, just mix the corn into the casserole. Easily done.

PANTRY BEEF CASSEROLE

1 lb. gr. beef, gr. turkey, or soy crumbles
1 onion
1/2 green pepper
8 oz. sliced mushrooms
28 oz. can Muir Glen crushed tomatoes w/ basil
12 oz bag of Tinkyada rice penne
1/2 teaspoon of oregano
salt to taste
red pepper to taste
pinch of sugar
3 oz. mozzarella
5-6 oz. mild cheddar

Directions:
Bring a pot of water to boil to cook the penne. Brown the gr. beef. Drain the excess fat. Add the vegetables and cook for about 8 minutes or until tender. Add the crushed tomatoes, salt, pepper, sugar, red pepper, and oregano. Simmer for 15 minutes. While the sauce is simmering, cook the penne and preheat the oven to 350 degrees. Once the sauce and penne noodles are done, layer them in a 3 qt. casserole dish. Start with 1/2 the sauce, then all of the noodles, then a layer of cheddar cheese, then the rest of the sauce, and top with cheddar cheese and mozzarella. Bake for 30 minutes.

Yummy!
